I think the fine folks at Bisquick read my post from last week and realized they had better skedaddle and git me mah pancakes! Friday night this beautiful box showed up in the empty space on the Ralph’s shelf that I had my keen eye on. Sunday morning my dashing sous chef whipped up a stunning stack of pancakes that rocked both of our worlds.
I would be tempted to have some gluten eater do a taste test because I couldn’t identify any difference between these pancakes and the Bisquick pancakes of my youth. They cooked up the same and were light and fluffy but filled you up like you’d eaten ten times as many as you really had. Just like old times!!!
I give this mix an A, not an A+ because the box is a bit small and I want to make so much with it that now I have to go buy another box or two. Get ready, readers, for every permutation of pancake mix you can think of. Biscuits! BoBerry Biscuits! Chocolate Chip Pancakes! Cobblers! Strawberry Shortcake! The possibilities are endless. What was your favorite recipe using Bisquick before you went gluten free or, if you are not gluten free, what is your favorite Bisquick recipe? I want more ideas!
(P.S. I know this sounds like an ad, but I swear it’s not. Bisquick is not paying me in $ or pancakes but I wish they would. Mostly in pancakes. But money would be fine too)
